Zucchini Pancakes

Ingredients

  • 3 c finely chopped zucchini
  • 1 egg
  • Salt and pepper to taste.
  • ½ c flour
  • 1 t baking powder

Directions

  1. Combine the zucchini, egg and salt/pepper. Sift the flour and baking powder together over the zucchini mixture.

  2. Drop by ¼ cupfuls on a lightly oiled griddle and cook until brown on both sides.

  3. Serve with melted butter, grated parmesan cheese, or sour cream.
